We’re searching for a Director of Culinary who can lead with confidence, cook with passion, and keep their sense of humor when the sauté pan is hot and the banquet count hits four digits.

This role oversees a dynamic culinary operation that includes five restaurant concepts and a world-class banquet program supporting more than 300,000 square feet of meeting and event space. In other words, this isn’t a quiet kitchen gig. It’s a culinary playground—and we’re looking for someone ready to lead it.

Responsibilities

What You’ll Do

  • Lead, inspire, and develop a talented team of culinarians who care deeply about their craft.

  • Oversee the culinary vision for five restaurants and a high-volume banquet operation.

  • Elevate the food program and help position Town and Country as a top culinary destination in San Diego.

  • Partner with Food & Beverage leadership to design menus that are creative, profitable, and unforgettable.

  • Maintain exceptional standards in food quality, safety, consistency, and presentation.

  • Bring energy and leadership to a fast-paced resort environment where no two days—or events—are the same.

Qualifications

What You Bring

  • Proven leadership as an Executive Chef or Executive Sous Chef in a large resort, hotel, or high-volume restaurant environment.

  • Experience managing multi-outlet kitchens and large banquet operations.

  • The ability to inspire teams, mentor future chefs, and build a culture where people want to stay and grow.

  • A passion for ingredients, technique, and taking a culinary program to the next level.

  • Strong operational discipline—food cost, labor management, and kitchen organization are second nature.

  • The ability to stay calm, focused, and maybe even a little cheeky when the tickets start flying.
